Unless you have been living under a rock for the past year, chances are you have heard of gluten, two proteins (gliadin and glutenin) in wheat, barley, rye, and other grains that contribute to the chewiness of bread and give stability to baked goods. Hang around enough gyms, fitness and health gurus, “paleo diet” (in quotations because there is no single paleo diet) enthusiast, yoga studios or whole foods’ and you’ll likely hear that gluten should be avoided at all costs.
